PACIFIC OR ROCK OYSTERS

Pacific oysters, commonly called Rock oysters (Crassostrea gigas), are the species most commonly farmed in the UK. They are well adapted to UK conditions and grow more rapidly than native oysters and, most importantly, are not prone to any of the common indigenous oyster diseases.

We source our oysters from farms in Cornwall and southern England, choosing those farms producing a robust and meaty oysters.

When almost grown, the Pacific oysters are transferred to us to finish growing. When large enough, they are brought to our plant to go through the enhanced purification process designed to remove Norovirus.
